Spiced Nuts

These spiced nuts are delicious with a beer or a gin and tonic. They are also great tossed through salads or anywhere you need some flavour and crunch.

ingredients
  • 500 g mixed raw nuts (cashew, almond, pistachio, peanut, walnuts all work well)
  • 1 egg white
  • 2 tsp each ground cumin, ground coriander, ground white pepper, mustard powder, onion powder, smoked paprika, fine salt

method

Whisk the egg white in a large bowl until it reaches soft peak stage then sift in all the ground spices and salt. Fold the spices into the egg white then tumble in the mixed nuts and combine well.

Spread the nuts across a lined oven tray and place it in a 200 degree Celsius oven. Turn the oven off and leave it to cool – overnight is fine.

To store, place the nut clusters in an airtight container.
