Honey Joy Slice

I’ve seen honey joy slice recipes around the internet with added ingredients trying to make them healthier (urgh) or giving in a biscuit base. Nope, nope, nope. I just want classic honey joy taste only without the sticky paper cup.

So, why not just make the traditional recipe in a slice tin (or small loaf tin if you want to halve the recipe) and squash it down a bit to help it hold shape? It ain’t broke so don’t try to fix it.

  • 100g butter
  • 2 tbsp honey
  • 100g white sugar
  • 5 cups cornflakes

First up, line a 20cm x 20cm cake/slice tin as this recipe comes together quickly.

Melt the butter, honey and sugar together in a small saucepan over a medium heat. Once the sugar has dissolved and it’s runny and foamy, remove from the heat and pour over the cornflakes.

Stir swiftly to combine well then turn the mix out into your lined tin and place in a 160 degree Celsius. If you like a softer, gooey honey joy you’ll be looking at about a 12 minute cook but if you want it crunchier go for 15 minutes. Whatever time you land on, be careful not to let the cornflakes burn. 

Let it cool in the tin then turn out and cut with a sharp knife. Store in an airtight container.
