Pico de Gallo

My only advice is to make sure your knives are sharp before you begin as this recipe is all about cutting.
Once you’ve made your own all other bought salsas will pale in comparison.

ingredients
  • 2 ripe large tomatoes, small dice
  • 1/2 red onion, finely diced
  • 1 clove garlic, minced
  • 1 green chilli, seeds included to ramp up heat but this is optional
  • 2 tbsp olive oil
  • 2 tsp lime juice
  • 1 tsp salt
  • coriander leaves, rough chopped

method

Mix loosely and let sit for at least half an hour before adding coriander leaves then serve immediately.
